Activation Guide

How to Activate Your Dehydrated Sourdough Starter

You received 15 g of dehydrated sourdough starter. With a little flour, water, warmth, and patience, you can bring it back to life and keep it going for years.

What You'll Need

  • Organic flour
  • Filtered water
  • A clean glass jar
  • A warm spot around 75-80°F (24-27°C)
Day 1

Wake It Up

  • Add the entire 15 g dehydrated starter to a clean jar.
  • Add 15 g filtered water and mix well.
  • Let it sit for 1 hour. This gives the dried starter time to fully rehydrate.
  • After 1 hour, add 30 g organic flour and 30 g filtered water. Mix until everything is well combined.
  • Cover the jar loosely. Do not seal it airtight.
  • Keep it at 75-80°F for 24 hours.
Day 2

First Feeding

You may already notice a few bubbles or a slightly fermented smell. Don't worry if there isn't much activity yet. Your starter is waking up.

  • Take 30 g starter.
  • Feed it with 30 g organic flour and 30 g filtered water.
  • Mix well, cover loosely, and keep at 75-80°F for another 24 hours.
  • You can discard the remaining starter.
Day 3

Feed Again

  • Repeat the same feeding: 30 g starter, 30 g organic flour, 30 g filtered water.
  • Mix well, cover loosely, and keep warm for another 24 hours.

At this point, you should begin seeing more bubbles and some rise in the jar.

Day 4

Build Strength

  • Repeat once more: 30 g starter, 30 g organic flour, 30 g filtered water.
  • Mix, cover loosely, and keep at 75-80°F.

Your starter should now be noticeably more active, bubbly, and rising after feeding.

Day 5

Ready to Bake

By Day 5, your starter should be active and ready for baking.

  • Shows plenty of bubbles
  • Rises noticeably after feeding
  • Smells pleasantly tangy and fermented
  • Ideally doubles in volume within several hours after feeding

Every starter and every kitchen is a little different. If yours needs another day or two to become consistently strong, simply continue the same daily feeding.

Before Baking: 1:4:4 Feeding

For a stronger build before making bread, you can use a 1:4:4 ratio. For example:

  • 10 g active starter
  • 40 g filtered water
  • 40 g organic flour

Mix well and allow it to rise until it is active, bubbly, and at or near its peak.

Once your starter is established, you never need to start over. Keep a small amount, feed it regularly, and it can continue producing sourdough bread for years, even generations.

Take care of your starter, and it will take care of your bread.
